I have usually (and by "usually", I mean "twice") started my semi-superfluous building binge with a warmup that consisted of an elevated roadway leading to my trade depot.  This has the dual advantages of funneling attackers into one specific direction and making caravans much, MUCH easier to protect from ambushes.

Pave every surface in stone blocks.

Bonus points if it's with Floor constructions and not roads.

More bonus points if you trade all of your rock for native gold blocks and floor it with that.

I find Stone-Crafters to help immensely with clearing excess stone while generating pretty decent wealth.  Plus it brings in a good load of XP for them to boot.

Another option in addition to the other suggestions would be to floor any non-rock layers in your fortress.  This will consume a fair bit of stone and should add a touch more value to the area.
