BTW, are there any hostile creatures (fish excluded) who are impervious to drowning/moats?

Marksdwarves [+ construct fortifications for them]. They will destroy everything in the vanilla game.

Not quite. Fleshless enemies (Bronze Colossi, for example) are extremely resistant to piercing attacks. That's why it's always good to have a decent squad of hammerdwarves or macedwarves.

Yeah that is true, however I very rarely see those kind of creatures in the vanilla game.  :)

Undead too (as long as it's not a lava moat).

Put marksdwarves patrolling around the grates on z+1 and hammerdwarves behind/on/in front of the bridge. Hook the bars up to a lever and pull it so they are open then hook the bridge up to a lever so it can be opened/closed. You could put some chained animals on the south side of the first and third rows of the bridge for a thief trap.

To sum it up, in this design you have murder holes, a shoot-throughable extended entrance with heavy guarding, a portcullis, a moat and a drawbridge all in one.
It is advised to build your structure over a brook.

I found that the best defense for my play style is a single entrance (or at least the ability to seal secondary entrances) with a set of spike traps connected to a lever inside. I usually only keep a military of 10 dwarfs or less with this setup.

I create a box shaped yard, with a one tile entrance on the outside, and a one tile entrance to the fort on the inner side. Every tile in the box has spikes, linked to the lever in alternating states. The one tile outer entrance has a flood gate (mostly useless against larger foes). I station one legendary wrestler (doesn't take long to train them up) on the inside of the inner door, and lock it, leaving the floodgate open. I set the lever to be pulled repeatedly. I then open and close the inner door to bait the enemy into the spikes, and close the floodgate as well as locking the inner door.

I've survived rather large sieges, and a couple large monsters this way. After a few of them I realized the outer floodgate isn't all that necessary, even if it is satisfying to leave the goblin leader with no escape.

I've noticed that if there is one open entrance, the attackers will ignore any closed and locked ones even if they could break them down.
