You never know.

Check out his list of requirements (hit Q and hover over his workshop).  This may help you make your pronostics.

I had barrels and animal traps made out of jewels, and maybe even a wepon of some sort, not that I remember.

But the golden rule is that if it is makeable any other way, the dwarf will make it.

If you save the game when the game autopauses for the beginning of the construction, savescumming can change the artifact made

Turn that steel shoe into a steel.. boot. 8 times in a row. Takes some time to get something you want since the game seems predisposed for creating something that's supposed to come in pairs. But persevere and you'll get that platemail

turns out what he made was a perfect star saphire adorned with menecing spikes of star rubie they where the only gems i brought and i had decided to sacrafice my anvil for them for no paticular reson

Yep, you'll have engravings of your gem artifact, and engravings of engravings of said artifact.
My fort has produced 3 artifacts so far, a helm, a cross bow and a wooden ring...guess which one gets engraved over and over  ::)

....They just refuse to stay down unless butchered, in which case their skins will haunt you until you subdue and tan them. Never has legendary butcher and legendary tanner seemed so valueable as in this release.

As soon as you see a mood, you save, wait to see what he needs and what he makes, and if he makes something useful (otherwise he dies very painfully), you ctrl-alt-del DF and start again, forbidding everything but your most prized resources. That can lead to very awesome Adamantium-adamantium-star rubies-dragon leather statues. That's very awesome. So very very awesome.

I do the forbidding everything except the most expensive stuff, but not the save+reload part.
