Yes. You can toggle that on and off with toggle engravings.

I tested it out now, and it looks rather gaudy and messy, hence I doubt I'm gonna change my "start obscured" setting anytime soon.

I must not have been very clear. We're talking about this setting:
[ENGRAVINGS_START_OBSCURED:YES], right? That was my default option and I'm playing d11, used to play d10 (only got into the game very recently).

While it's nice to be able to see just what the engraving is in general (very generally), I find that it creates visual clutter.

I've also noticed that sometimes cats will actually drop off their vermin kill in the refuse pile. They still tend to drop it wherever most of the time though. Usually in the most inconvenient spot like on top of a structure about to be built, resulting in the job bieng cancelled.

Damn, that happens a lot.  I found that a dwarf was perfectly fine with moving 8 rocks away from the site of my trade depot to build it, but not ok with moving 1 mechanism.  Possibly because the mechanic had tasked it and then gone to bed.

Reminds me of those stories of elephants refusing to move logs because there was a dog sleeping where log was supposed to go.

But apparently dwarves on have that with dead beasties. I wonder why. I'm guessing because building on top of it would hide the hideous sight.

Named pets defend their master when ever attacked, regardless if their trained in war but than they run away.

Magical things can teleport in fortress mode. They don't seem to do it very often, though.
