Or do I just delete the old and install the new one?

1. Download the new version and unzip it.

2. If you wish to use a save from the old version, go to the data/save folder (in the old DF's folder) and copy the appropriate region folder. Past it in the data/save folder of the new DF.

regardless, the slime shooter will be completed, come hell or high water, which are both entirely plausible setbacks at this point.

You don't even need to copy and/or backup your save. Since the zipped DF files doesn't include a save folder noting will be overwritten. Only files with identical names will be overwritten.

Unpacking new DF onto the old DF is bad.

He's talking about unzipping the new onto the old, in that the new won't overwrite your saves.
NO.  Do not, EVER, extract the new onto the old.  It causes ALL SORTS of issues in the raws (including "Wizard fortress")
Extract the new version to a new folder and move the save folder over.

Usually nothing goes wrong, but it's best not to take chances because something weird could happen like your saves getting corrupted. That wouldn't be fun.

That's the only way I've ever done it.  Copy out my init, and any saves I want (delete the rest) and unpack.
