When battles are going on, Amon Amarth is what seems to fit just right.
I can't decide which lyrics fit the best, but I like "Arson" :

They came riding at first light
Fifty men armed to the teeth
The sounding horn called us out to fight
We went to meet them with our steel

Outnumbered yet we fought

We took refuge in our home
Our downfall had just begun

"700 Hobo Names" by John Hodgman. One of you must know what this is.

Alternatively: The theme to Fraggle Rock. Particularly good if your fortress is spiraling into decay and destruction.

While it's perhaps not appropriate, I frequently find that I can't get "Dwarf Invasion" by Reggie and the Common Denominators out of my head while playing Dwarf Fortress.

Leather Militia for sieges and ambushes
Jump in the Fire, for all the critters living in the magma pipes
And Justice for All, for obvious reasons
Creeping Death for certain events
