Who needs stockpiles?

How many people here actually bother assigning stockpiles early on? I find a lot of things actually seem to run more smoothly when I don't designate stockpiles--if there's no stockpiles, dwarves needing an item will go pick it up without having to wait for someone to haul it to the pile first. You would think this would lead to some lost time while they go fetch distant objects--but you'd have to spend time moving those items anyhow, and early on you've got such a massive backlog of work projects you need to do that it's better to just grab items as they're needed instead of wasting time piling up a buffer. Plus, if you're trying to build something on a spot with items on it that don't have a stockpile to go to, the builder will just scoot the offending items off the edge of their building area instead of suspending the project and waiting for someone to cart the stuff away. Basically, I just make a food and refuse pile to begin with, add in wood and then furniture as I get the time, and pretty much don't worry about any other stockpiles until I get some immigrants to do the hauling for me. Does anyone else play like this, or do most people stockpile everything from the beginning?

I tend to stockpile from the start, but I have lots of practice at making my dwarves not waste time.  A refuse pile should be built immediately, but you don't even need to worry about the food pile until you're actually producing new food.

You're right about the food stockpile, I'm typically producing new food at the start in the form of hunting and fishing, which is why I designate a pile for it. That's also possibly the reason why you have spare time to devote to hauling and I don't.

Leaving objects in a workshop clutters it, slowing down production.

But right at the start you may be using up much of your production as soon as you make it. The only building that I really have clutter problems with at the start is the butcher (since I am stockpiling food, unlike other stuff), which the food and refuse piles handle.
