Give it some time... I've played on a half evil map that started out with normal hoary marmots, and then after 2 years spawned skeletal goats.

I once embarked on a savage/serene/haunted biomes map.  It had wolves and werewolves that would periodically raid the settlement, as well as phantom spiders.  The settlement didn't last quite long enough for me to see if any undead came around.

If you do get undead though, you have to do it raccoon-city style.  Dig a multi level under ground hive-fortress with a single escape route.  Let the undead in to kill every single dwarf, and then attempt to reclaim in adventure mode by yourself.  =)
