Stairs and stone

When digging out stairs, is stone produced?

I'm carving out a reservoir and it's rather tedious to dig shafts downward to checks for precious metals. I'm afraid if I carve out stairs entirely, valuable minerals may be lost. Are my fears ground in reality, or may I dig without worry?
