I always assumed they beat the food until it surrendered and agreed to be whatever shape they wanted, in much the same way the perform stone/woodcrafting/construction (metal, once you heat it up, is soft and weak and can be shaped easily to begin with).

I don't know if the rest of the world has something similar, but I always considered "booze biscuits" to be something like the Austrian Punschkrapfen - a soft, fluffy Biskuitteig that is literally soaked in rum and covered with a thick, sugary glaze to keep the alcohol from evaporating.
