It seems colossal multi-tile spiders were emerging from the spider-shaped chasms. We can't have that.

What does he mean 'there's only one this or that left, so pick one.'?

A very common phrase used to describe a potential group of objects.  In this case, he's talking about the problems he has to work out, and how difficult they're going to be to work out.

"Well, I guess there's only one this or that left, so pick one."

Since there is only one problem left, the phrase "this or that" is a little strange, seeing as there's only one "this or that".  So, pick one.  Is it a this or is it a that?
