The rule for cave-ins is that an open 7x7 area is bad.

Bear in mind that dwarves must have the Architecture job enabled before they will build  supports.  A support needs an Architect to design it, and then a Mason to finish it.

In all likelihood your existing Architects are all busy, so your Masons are just waiting until an Architect comes along and makes some blueprints for him.

What do "Shift+a" does on v-p screen ?
I noticed that part is different for each dwarf.

That drafts them as soldiers (or turns them back into civilians). The bit that's different for each dwarf is the name of their military unit (everyone has a randomly assigned squad name, unless you put them under someone else's squad command).

Is that the squad activator?  It's a short cut to military activation I think.

edit:  that

Ok, got that.

What do i do with all that ore ? Casserite, galena (what is galena anyway ?), malachite...
For example malachite in Real Life (tm) is considered both stone and jem, yet...what do i do with it here ?

Take them to the smelter (a type of furnace) and make metal bars from them.  You'll need a source of fuel, most likely charcoal from the wood furnace.

hematite = iron
malachite = copper
galena = silver (well, it should have lots of lead I think, but that's not in)
sphalerite = zinc
cassiterite = tin

You can turn all of these into bars except zinc (I didn't realize that India was making pure zinc for thousands of years, or some such thing, though perhaps that was only with an easier ore -- you can't do it here).

Also:

tin ore + copper ore -> bronze
zinc ore + copper ore -> brass

Bronze makes stronger weapons/armor than copper.  Brass is useful as usually only to please specific people.  Perhaps it can be used for instruments later or something.  Silver is more valuable, and easier to obtain and use.

There's also a steel making process, using limestone, coal and iron ore to make pig iron, and then again to make steel.

Thats way too much wasted wood. Why dont they mine turf, or maybe use alcohol as fuel ? Maybe oil somewhere inside the mountain ?

Another thing, why do trees seem to shrug off "chop" designations over time ? There is a tree, i set it for chopping, a minute later - it is not set. Once again - once more. Only on third time did it finally get chopped.

1) There is coal in the mountainside which is used to fuel your forges, but i'm afraid you'll have to delve VERY deep into the mountain (in and around the chasm; an infinitely-deep pit) to get it.

2) Trees may be deselecting themselves because of job cancellations. Press O to bring up the "O"rders panel and press the button relating to job cancellations /announcements.

Is it as scarse as wood and consumable ?

Another one, i have no soldiers and no hunting jobs, i created an armory with weapon stands (all items and materials allowed) and i DO know i have had 2 iron crossbow lying around somewhere...i cant find them and dwarves wont haul them to armory on their own somewhy...what to do ?

Yeah, the default for coffin burial is No since you could be setting up a tomb for a noble and have it suddenly claimed by a peasant otherwise.

It's hard to say what's up with the crossbows unless you find them.  If you have a bookkeeper you can do it from [z - stocks].  Then it might be clear, or not.
