Trying out 33b adventure mode, I got into a jam in a ruin.  My dwarf's body was mangled and bloody.  But on pressing T for travel mode suddenly everything healed.

Yeah, at the moment, traveling fully heals and regrows lost limbs, I believe. It also takes away hunger and thirst. Don't know if Toady plans to change this in the future.

Right, this is intentional. Think of it as healing over time, since the travel mode is really compressed time. It does not regrow limbs or organs, though. You also can't travel in certain situations, like while you're fighting, so it's not a magic button.

The idea, right now, is that actual healing and the like hasn't been implemented. We don't have things like bandages to stop bleeding, nor do we have the option to learn first aid. In other words, any wound that doesn't heal on its own is currently fatal - or would be if insta-healing while travelling wasn't possible.
Rest assured, this is a temporary system (unless something major has changed since I last looked). Seeing as the combat arc is coming up rapidly, and healing is kinda related to combat, it may be a system that's soon to vanish. Then again, I might be wrong about that   ;) .
