There's a good chance this guy's disappearance has something to do with healing, so Research: Healing Arts. Once that's done we can try to figure out tools.

@SCREE, am I correct that the amount of food eaten every 3 turns is 5 food + 1 food for every npc worker, or is there some other formula?  Also, does the wise man count as an npc worker for the purpose of eating?  And for that matter, do missing npc workers count?
