What job is associated with constructing buildings?

I'm trying to assign a specialist labor to construct buildings in a timely manner. However, I'm not sure what labor to assign. What labor should I assign?

In order to make a construction, a dwarf must have the "Wall/Floor Construction" labor enabled, found under the "Other Jobs" heading.

The problem with actual buildings is that they require a different job depending on the building and/or the materials used.

Generally speaking, you want mason for stone buildings, carpenter for wooden and blacksmith for metal buildings.
But the catch is that many buildings do not have quality level. In such case, even if you have only 1 selected dwarf allowed to do, let’s say, masonry labor, any free dwarf will construct a building without quality made of stone (typical example - most workshops). That is generally not a problem because it doesn’t take long to construct most buildings.
However, for buildings with quality you may want the specialised dwarf. I’m not sure if it influences construction time, but it surely makes big difference in quality. Buildings with quality level are bridges, furnaces, supports, wells, water wheels, trade depots, archery targets.
