I got too many dwarves preparing raw fish, yet I only have 1 Dwarf with the Fisherdwarf work detail. After realizing "Fish Cleaning" is its own thing, I found out that I'm unable to add "Fish Cleaning" to the existing "Fisherdwarf" work detail without being forced to add another Fish-related work detail. From that, I would really love a means of being able to customize the existing/default work details, at least to also know what they entail (e.g: The Hunter work detail is a bit vague in that I don't know if it also includes Animal Trapping and/or Animal Training, and if not, I could add them to it). It would really help if we could modify/add/remove the the default work details like every other work details, to add flexibility and to help counter work details cluttering. It would help avoid having multiple work details doing nearly the same things, and seeing too many of the same roman numeral icons that depict different work details.

Even better would be to also have the ability to manually change the work detail icons, and have icon types to choose from such as Selecting a "Gem" icon to represent a "Gemcutter" work detail. I've seen a mod for it but I'm not one that typically uses mods, so it would be great to have the work details menu be more detailed in vanilla, hence this suggestion post.
