What type of Regiment you choose mostly just has a small effect on stats and a bigger effect on equipment. The only real limits would be things like the Operator having nothing to do if you guys don't have anything to drive.

You can. Rough Rider is the cavalry choice. Horses, weird Krieg horses, Grox, and flying cats are pregen mount choices in addition to some other beasts and build-a-beast option.

It doesn’t take a specialty.

Double checked and I was right, those upgrades are only available to Guardsmen rather than Specialists. Specialists due, however, have their own advances in a book I haven't read yet. They are as followed:

Ratlings are Space Hobbits with an oddly endearing focus on cooking. They're snipers by default.

Longshooters are flavored like Sharpshooters but in the end they have different abilities, the main similarities being they like to snipe things. Mechanically Sharpshooters are closer to base Ratlings. Both ratlings have a higher focus on stealth compared to the Sharpshooter.

Architectus Magnus ->Tank driving/fixing focus
Crimson Exemplar -> Combat focus
Enginseer Prime -> Servitor minion focus

Salvage Recovery get a salvage recovery tank and a job to go get broken tanks and bring them back to base, then fix or recycle them
