Oh noes!

I vote for the classic method of colonizing the interior of a moon, then putting some engines on it as an afterthought.  Seems very dorfy.  You don't even need to worry about digging too deep, because at some point the gravity's too low to use a pickaxe.

To get weird with it, I've always had a half-baked idea about colonizing mercury which could apply here.  What you do is tide-lock our ship with the sun, then harvest the heat differential between the "day" and "night" sides for bulk "solar energy".  Maybe could be a lot simpler and more robust than solar panel tech, in a semi-closed system where rare elements may be difficult to acquire.  Although I have no idea what I'm talking about.

Also that's more of a space habitat than a space ship, sorry.  I just like rare "elemental plane of earth"-like settings and artificial biospheres.

Well, there's the baked-potato-asteroid idea.

Cut a cavern into the centre of a suitable asteroid (solid, or at least can be annealed solid rather than a rubble-pile) and push water into it. Get it spinning and use a solar-concentrator to heat it up, enough to make the 'rock' plastic/pliable and responsive to the pressure from the (super?)heated water.

May take trial-and-error, and not make it burst into 'popcorn' (or shatter), but the idea is to get a hollow-centred body which you can then cool make sure is spinning just right to get an interior 1G (or otherwise tolerable) force, surrounded by nice and even 'recast' solid rock[1]. Which is fairly dwarfy...

(Now you just need to confiscate, or at least tightly control, all the pickaxes. Digging "too deep" presents a different problem. ;))


[1] Well, melted to sufficient ductility, but in bits it is probably very close to having been MAGMAAAA!!!!

I think the big question is: Do you not?

You want to use the excavated material to build a pair of counter rotating toruses for habitation and spin them up to produce artificial gravity, put solar panels on a pair of docking spires sticking out of the potato perpendicular to the spin to allow easy docking and constant power generation. Easy space station with artificial gravity, hide in potato from solar flares and meteor showers.

Or maybe live full time in the potato and use the toruses for manufacturing and food production. Dunno.

Can extend the toruses out to create habitation drums with internal atmospheres, too. Expandable.

- the tavern would have a retracting floor

You might like "2312" by Kim Stanley Robinson. Does his own version of the baked-potato/bubbleworld asteroid habitat. From one of which, you get parachuting wolves!

As you might expect, from the author of the Red/Green/Blue Mars trilogy, it's hard-SF with a lot of speculation as to how the future unwinds. Perhaps a bit fanciful (and a magnificent confluence of things happening with/to/by the protagonist) in various directions, but it has a wide-ranging story-arc inherent in that strand of SF.
