Is there a way to know the name, or gender or race of the eyes if you poke them out, you could make a eye gathering game out of it that way, collect all the eyes of all the monsters in the world.

Not even sure if you can keep eyes you poke out, but it would be cool.

You can't keep them.  They are not spawned as objects in the game world, like a lopped-off limb is.  They're simply "misplaced".

I once modded dwarves with beards that could grasp. Sadly I built the body wrong and they kept dropping there shields and having random pain.
