Wilderness Encounters?

Do these happen, beyond the occasional ambush?  I've noticed that I never see major wildlife outside of caves and ambushes, even in areas designated as evil.

I don't really spend a lot of time wandering the empty wilderness, but the elephants/leopards/horses that always wander into town and kill people must come from somewhere, so I'd guess they must be out there, even if they're pretty rare.

Actually I remember running across a pack of goats while trying to find a way over a mountain, so they do happen.  The goats really just ran away from me though.

Yeah, ran into a cheetah.  It surprised me.  Also some gofers.
