Long story short, Delinquent Deals are irregular opportunities to do something disadvantageous or ill-adviced for the sake of personal pride. And few things are as important as a delinquent's pride. By fulfilling the Deal's condition, the Gang receives a reward for it.

In the world of delinquents, Respect can get you much farther than money. People respecting the Gang may not have immediate effects, but can play an important factor down the line. They can give you infos you'd otherwise have to work hard to gain it, or do some minor favors for you at no cost, maybe even join in future fights if it's not inconvenient for them.
Note that the fact that you're being respected by many, or the fact that you're not, won't change the main storyline (much).
