Ok, so here's the thing about mantis, or at the least, the 10 year old version that the DF bugtracker uses: Apparently it shares the same search among all guest users. Your search is failing because someone else somewhere else is also doing a search, but completely different from yours. If you log in and do a search, you will find that the UI is cumbersome, but your searches will work normally.
No. I access Mantis logged in, but searching still usually returns garbage, and always has. However, there may be more than one problem with software...

I also only ever use Mantis while logged in.

On Firefox/Linux the only category I can select is General. The only other choice is the [any]. That's after a cache clear.
I had to clear my cache on Chrome and now I can only select General and [any] there as well. Logged out, the same. Logged back in, the same. Seems to be the only drop down menu that's missing items. Searching for words seems to be working as expected.
I checked the Report Issue page to see if that Category menu had all the options which it did. And now when I go to the View Issues page that Category menu also has all of them. So, now everything seems to be working fine for me. 🤷‍♂️

(I too am always logged in.)

Logging in is definitely good advice for anyone running into issues while logged out. Another thing you could try even if you are logged in: from My View, click on "Recently Modified" and start your search from there. Search settings are saved per-account, so if you've ever performed a search on a weird field, that will persist until you reset it and might not be obvious. "Recently Modified" doesn't reset your search settings, but gives you a clean set of filters you can use to base a new search on (which will overwrite your search settings once it's performed).

That does reset your search settings. When not logged in it's just a Reset Filter button.

The thing is, most of us use the bug tracker regularly. We can see when something we do every single time stops working. And yet continues to work when using a different device.

Process:
My view, click Recently Modified.
Search "Fish". List of results not at all containing the word fish.

Back to my view, click on Recently modified
Search for any other word at all: Exact same results as searching for "fish".
Notable weirdness:
The hide status which was set at "none" when I made the search has changed to "closed (and above)" indicating that this is just some page I once brought up in a search that has "stuck" somehow. And "sticky issues" which I don't recall ever using before has changed to yes.

Back to my view, click on Recently modified.
Clicking "advanced filters" brings up exact same result as searching for "fish".

Back to my view, click on Recently modified.
Clicking "reset filter" brings up the exact same results as searching for "fish".

Again, works fine on my PC. Not on my phone (both Chrome). Stopped happening once before when I cleared my cache. But it's started up again just a short while later and clearing my cache doesn't seem to fix it any more.

Recently modified > View Issues also brings up the exact same list. Most recent entry in that list in April 6th. So none of the more recent bugs are in that list.

Does the phone only use cell data? Does it work correctly if connects to wi-fi? It sounds like the cell provider might be caching the results.

Wi-fi. Same wi-fi the PC is connected to.

I would consider myself to have used the bug tracker regularly as well, although maybe not as recently as others. (I've been on it since 2013-2014, although not as active recently as I would have liked.)

At any rate, from your description of the issue, my guess is that your search parameters are getting cached somewhere. If it's specific to a device, then you could try clearing cookies for Mantis and see if that helps. On Chrome for Android, that should be under Site Settings -> Storage -> bay12. I didn't see any cookies that looked like they were storing search parameters, though, so I don't know if this will help.

Another possibility: Are you using http://www.bay12games.com/dwarves/mantisbt or http://bay12games.com/dwarves/mantisbt (without www?). I'm using the one with www, and got reasonable search results for both "fish" and "goat" from the Recently Modified page (noting that a lot of results don't contain the word in the issue title, so at first glance they look less relevant). I recall issues with one of those URLs redirecting to the other, which gave me logged-out views in the past. It's possible that if you've logged into both domains and have bookmarked one URL that redirects you to the other upon performing a search, you could end up with different search parameters after you've performed a search. I don't know if the site configuration has changed since I experienced this, but the "www"-prefixed domain seems to be working fine for me.

Edit: I was unable to reproduce that domain-related issue on desktop Chrome, although I have experienced it on mobile Chrome in the past. If it helps for testing purposes, if you remove "www." from a URL, you have to add "http://" in front to stop Chrome from silently re-adding the "www" you just deleted.

Let's see, I use the link from Bay12 which appears to be:
http://www.bay12games.com/dwarves/mantisbt/

And the URL after searching is
http://www.bay12games.com/dwarves/mantisbt/view_all_bug_page.php

Cleared storage. Goat and fish bring up the same old list. Hmph. Weird issue. Will just have to refrain from reporting bugs while out walking.

--edit
Oh. But on the PC, clicking on the link from Bay12Games takes me to:
bay12games.com/dwarves/mantisbt/
No www.

(Fish and goat take me to fairly fish and goat related search results).
