Running out of plump helmets..alternative farming crop ?

I did not check a caravan for plump helmets
No plump helmets to get and so i must farm outside the.
I read a advice here  to get potatoes as good food source, but where to find them

What is the best outside crop for farming ?

Unless you live in a desert or glacial area, plant gathering is a very quick way to get a lot of food quickly.  In heavily forested or grassy areas it's much faster than farming.

But as far as outdoor crops go, it's easiest to go with anything that can be eaten raw.  You can go to this list and sort bu column "Eat" to see that.

Now i prepare easy meals (biscuits) and how to (see)know the raw eating of plants ? : or if the plants are gathered in a food barrel they are maybe automatically eaten by the dwarfs  ( if there is inside the barrel a eatable plant )

Some plants can be eaten raw and some require cooking or milling into a powder before they can be eaten.  A few plants can't be eaten at all, typically dyes like Hide Root and some plant fiber threads like Rope Reed.

As a rule of thumb, most fruits and vegetables can be eaten raw.  Most of the things that require cooking are beans, yams, wheat, grains, and nuts.  I'd recommend against cooking fruits and vegetables because they won't create seeds if cooked.

- To find which plants you can eat raw you have to look them up at the wiki (or check their description in the raws folder).
- Mostly ignore the recommendation to plant potatoes. Each embark is in a "biome" (there may be more than one, if pre embark allowed you to go through biomes with F1, F2,...), and the surface plants you can cultivate are dependent on which biome the farm plot is is, and matches the plants that can be gathered from it with plant gathering (and, usually, a few more that are not present on this particular embark, with seeds sometimes possible to get via caravans).
- Ignore beans, as they're bugged and unusable. Most forms of yams are not possible to cultivate because there's no way to collect their seeds, as they can only be cooked, which destroys seed. Personally I grow anything that can be used to produce booze, plus things that can be used to produce thread.
- Dorfs can eat many plants raw, and do so on their own, leaving seeds behind. They can fetch their food from barrels, but that's subject to the container bug, although it's probably not a big issue for food.
- Cooking is dangerous as it destroys the seeds, and thus has to be used with some care. The stocks menu has a section for food where you can change which plants the dorfs may cook and brew (brewing produces seeds).
- Underground crops, such as Plump Helmets, can be collected in the caverns, once you've breached them, which allows you to restart farming of these once you've gotten seeds (from raw produce eating, thread making (Pig Tail only), or brewing. Note that caverns have their own dangers, though.

The plump helmets are gone, can't plant them anymore on a farmplot  for making drinks.
So i must find another plant.

Yes, I understood that. That's why I told you how you can get new ones.

In your situation I'd d-p mark the whole embark from one corner to the opposite one to collect every plant that can be collected, see what you find, check the plants on the wiki, and plant reasonable seeds once the stocks menu shows you have some. I'd also start brewing from plant on repeat once plants are collected, which will both provide you with booze and with seeds.

I did now gathering plants ...brew drinks
Can't defend the fort because there is no ore and stone to get.. :)
Plenty of food and drinks for now.
Probably the dorfs will not die for thirst and hunger, but attacked by Goblins they are defendless after 2 years and with 76 of them
Well, i dig around and found stone ….but not as a boulder and digging 10 layers deep gives : damp stone

In stock 60? rocks in brown color : nothing i can to do with it, and probably it is stone used for the embark wagon and other stuff?

What you need for defense is a door to keep the enemy out, and pull everyone behind it if enemies arrive. If goblins come and bring either trolls or ogres, you need to build a wall inside the door before the building destroyers can break it. Then you sit inside and wait until they tire and leave (typically either one season or one year).

You can make armor out of leather and bone. To make a "rock" sword you need obsidian and logs.

Stone (resulting randomly from digging through rock, about 1 out of 4 tiles dug) can be used for stone crafts and construction (like wood). If it's an ore it can be used to extract metal from it in a furnace.

If the stone you have is all ore (very unlikely), it can't be used for other than ore extraction unless you enable it for other use in a rock sub section of the "z" screen. A mason can use rock in his workshop, and a craftsdwarf can make rock crafts, while a mechanic can make mechanisms (needed to operate drawbridges).

The "?" means you haven't followed the advice to set up a bookkeeper to keep the accounts completely accurate.

Note that the wall is an emergency measure to be applied only if the siegers have building destroyers. If it's only goblins and beak dogs a locked door will keep them out.

The way to get dwarves to safety is to create a burrow that covers the inside of the fortress and then create a civilian alert (on the military screen) that uses that burrow. When enemies arrive, you activate the civilian alert and the civilians are ordered to move inside the burrow, cancelling any jobs (but, stupidly, not dropping heavy loads carried to move faster).
Check the wiki for burrows and civilian alerts.

Also note that forgetting to disable a civilian alert after a siege is lifted is the most common reason for cancellation spam.

I did something already with a burrow .. the  fort population is walking in and out the fort.
Its only that if the population is assigned to a burrow that a wall must still build behind the door
