stock screen explained

I need a complete explanation of the stocks screen.
What items are in stock ? : inside /outside items

This is a broad question, janamdo, so I'll give a broad answer - if you need more detail just ask.

The stocks screen roughly represent everything in your fort. The left column shows the number available, and the right column shows what is not claimed or being moved. This screen is updated more accurately by having a bookkeeper in your fortress. (Check the [n]obles tab).

So, the left column - white or grey color - are in stock (should be in stockpiles somewhere). And red is not in a pile.

If you keep your stockpiles sorted and clear, you never need to look at that screen, really.

The stocks screen keeps track of every item on the map, inside, outside, and even things that are in caravans.
Also, to get your records accurate, do the following:

1) Have a chair or throne made at a workshop
2) Build the chair / throne in a room
3) Use 'q' to designate the room as an office / study
4) Use 'n' to open your nobles screen, scroll down to Bookkeeper, and select a dwarf to assign
5) In the nobles screen, while having the bookkeeper highlighted, press 's' to select how accurate you want your stock records to be

You might also wish to construct a table next to the chair / throne, because bookkeepers in my experience like to eat their meals in their study. If you have any more questions, just ask! Cheers!

Thanks for the answers, but it must be a more systematic approach to understand the Stocks handling
 - there is default view and a enhanced view ( when DF hack is used i suppose ? )
Starting with the default view.
- left column : probably listed all items in DF? , but not all are in stock, because the middle column shows a name with None labelled
- middle column + column 3:  description 
Middle column content:
 : None, white number, brown number with question mark (?) ( standalone, or attached with a red number with questionmark (?)
Question : what can be concluded from this "middle column"
for the listed stock items ?

For example
column1)Ammunition  -(column 2)None- red 2 - Yellow F copper bolts [2]
None = ?? not in in stockpile?  => check position by  using the Tab button by selecting column 3 with cursor and push Tab button => z : zoom option is now highlighted ( we can see the item ) ..it shows a yellow copper bolt outside a fort in the dense ryegrass 

The middle column has red numbers attached to :
 None
brown number? => with red number or with red number + question mark
white number  => with red number + question mark

Note: a question mark with a number is standing for a number what is not yet precise number ( this can improved the precision , so that is no problem further.

None= item is not existing
None+ red number : item is existing outside the fort in this example, but could also maybe exist inside a fort ,BUT not on a pile ?
So do we know now what NONE can be mean :)

Can we already conclude what the red numbers beside the column 2 are standing for ?
No i .. i did only one example with item(s) ammunition
Below that i do see a item armor  with a brown number 100 and a red number 7 
The TAB key is not working here ..in the default screen, but the enhanced view is not usable ?
So what are those two colored numbers for Armor standing for ?

Then i see a item Barrels with brown number :  no TAB button
So i general what are those brown number are standing for ?

Bracelets  white number 3 : When is a stock item on a pile ? .. checking with the TAB button: its a dwarf in meeting Hall
Probably depending (quess) accoording the name of a stock item with a white number you can predict the position?
In general a stock item with a white number : inside fort => on pile or not , and outside fort ?

The meaning for the main columns (grey and red) are here in the wiki, so in that image, 460 seeds total on map, but 13 seeds are locked somehow (probably planted in farm).

The colors for the detailed Tab view are in wiki section.

The wiki explains more, but it will help if your bookkeeper obtains highest precision because that will remove all question marks from the Stocks screen.

Planted should be blue. Red should be owned by a caravan or someone.

Yes, compacted view it is still not explained in full detail in WIKI unfortunately if i open a existing fort and look at the Stocks as i did in earlier post.

I start with a group of dwarves  with the wagon and nothing done :   there are brown figures  in right column in stock compacted view :
 drinks 60 ..brown color it stands for: ? ?

In containers, probably. Pots or barrels.

As stated clearly on the wiki page, brown means the item was created locally, as opposed to being purchased from a caravan (or brought with you during embark).

What screen ? ..i am referring to the compacted screen for a unknown brown color in the list 
Yes, the detailled stock screen has too a brown color

I have focussed on the stocks screens for now.
Feeding and housing the dwarfs i am now trying to master
Protection is another situation again for later
