For items susceptible to biological decay like items made of wood or leather, there should be a parameter that determines if it grows mold, requiring a moist environment or that the item is moist, and where the likelihood of mold decreases with dwarf carefulness. If an item is moldy, or fungusy depending on what the dwaves call it, it should experience wear in the absence of use.
