In my craftsdwarf shop I have the make bone crafts task, but there is a gray circle and its not getting done. What does the gray circle mean?

The gray circle is an "O". It stands for Order, indicating that the task comes from a work order, rather than being directly ordered by the player from the Add New Task menu.

how do i stop the order? I forgot how I got to orders, tried o but that didn't work. Can I cancel it from the workshop?

Cancelling an Ordered task from a workshop doesn't do much; the task will reappear because the work order still exists.
To get to Work Orders from the main game screen, the key sequence is j, then m.

Pressing j gets you to the Job List.
From there, pressing m gets you to Work Orders, which lets you manage work orders.

Note, after you cancel the order in the 'j' 'm', the order will remain in the assigned workshops until completed or cancelled.

If no dwarf started the job, you may have no dwarf with Bone Carving labor enabled, or those dwarfs are busy elsewhere (resting in a hospital, performing a "make 100 wood bolts" order, on a 12 month military schedule, etc), or there may be a less common reason (burrow restrictions, inaccessible workshop, etc).
