Plywood Pounder: In order to replace outdated melee weapons, we must upgrade to firearms. To do so we need a simple weapon that can be built in-mass by hand. The Pounder is such a weapon. Made of pipes, plywood, nails, and old-springs, being replaced with rubber bands as necessary. Low-pressure 12 gauge shotgun shells are standard, so the "smoothbore" barrels will not effect accuracy, and the low quality of the building materials won't be an issue. It is single shot, reloaded by hand. Essentially it is a salvaged pipe with a plywood stock. The firing mechanism is an old nail powered by the spring or rubber band, held back by a simple trigger mechanism.

Essentially, a bog standard zip gun

Design: Patriot Breach loading Musket
New Problems call for old solutions. Hearkening back to rifles such as the Trapdoor Springfield, the Patriot simplifies the design in some places while developing it further in others. To start, it is smoothbore to streamline construction time, and fires a 10mm black-powder brass cased round (Willing to add grain/powder weight, but don't want to number crunch unless needed) through a single shot trapdoor breach. It features a bayonet lug and a simple bayonet shaped from a piece of rebar.

The goal so this weapon is to get us a mass producible weapon with hand tools that is cheap but reasonably effective. Depending on how this goes we can adapt from there.

I'd prefer if it used 12.7 to 17.5 mm balls, and just making sure when you say cased you mean a paper case, right?

Are we sure we have access to a signifigant stock of bullets, or even gunpowder?

Maybe we should start with a bow or crossbow instead?

Or even a dual purpose throwing/stabbing spear? Ridiculously simple and easy, works as a ranged or melee option, it could give us a large lead in the early game. The most used weapon throughout all of human history for a reason.

It was replaced by the bayonet for a reason as well. We have firearms, according to the OP, ammunition for slow firing weapons isn't likely to be an issue.

A boat would probably be pretty simple to make and incredibly useful against zombies. If we make one later we'll be able to efficiently clean the coast, so lets attack the land-locked region first.
