The Legends mode description says "one of the reasons" for the war, not the only reason, which is why it changes whenever you look at it.  This makes sense, in real life wars don't happen for a single reason, though narratives like to paint it as such. Wars happen because the people don't like each other which can be for a number of reasons, and also because the aggressor thinks the benefits outweigh the costs and risk.

Do we though? If our monarchs area all perfectly rational Adam Smiths, then yes. But real monarchs? All they really need to know is that expanding their borders increases their wealth. You then factor in diplomatic relations and the relative strengths of the two sides, throw in the monarch's personality and maybe some strategic thinking (control chokepoints, bridges, harbours, etc) and make decisions accordingly. Economic thinking could be added to that framework.

It does not have anything to do with them being economically rational in some abstract way, nor does the economy itself really. 

It has to do with determining how hard a faction is going to fight for a claim, based upon how much it needs the resources found therein.  Without the economy we would need to create a placeholder to guess what the economic situation would be without it being so, that would not be efficient from the game design POV.

Yes, you are right, in fact i wrote "the real reason", the pretext.
But it was not like that for all the wars. In the ancient time the first reason war was the territorial control and raids. This when civilizations founded cities, as happens in the game.

Read the history of archaic Rome, the Greek colonies in the Italian peninsula, Latin league for defense etc ...
