Keupo makes new forts often.  Uses vanilla tileset, and dfhack to make stones and gems and some dfhack utility to dig / stamp the dig for really interesting layout.  Also great music.

Joel Vinesauce twitch is a hoot to watch because his tangents are absurdly entertaining even for non-DF. 

Quill18 is alright and has a motif to flavor going into it. 

Zest the blue red panda facecam is alright. 

Amixil is alright too, and has been adding twitch commands so viewers can kinda interact. 
e.g. !dwarf will tell you dwarf named after you is still alive in the current fort. 
!beard shows how long your beard if based on viewing and chat activity. 

Seyudad? (probably meant as city in spanish) There's also a 24/7 AI DF with ok music.

There are a few others who twitch with maybe 5 viewers. 
I visit them all on my 2nd monitor while I do my thing.
