Is there a mod that changes the default behavior of the game of deleting your saves from characters that died in adventure mode? If there isn't, how can I mod the game to change this?

Isn't there an init option for save backups?

Does that not work in Adventurer?

Also Dfhack has a quit to desktop command "kill" or "die" or something. Use that when you die to quit while skipping the save reset process.

Or you can just open task manager and kill DF process.

AFAIK AUTOBACKUP is only for fortress mode, it requires use of AUTOSAVE on a yearly or seasonal basis.

Just type 'die' in the DFhack console, or kill task.

Right, yes, that makes sense. Well then, manual backup it is. Ctrl-c, ctrl-v easy enough. And kill the game when you die if you must.
