Its best to flatter them first with a generous trade so they are estatic mood, then they'll take anything usually 40/60 in your favour valuewise.

Did you attempt to sell the goods for the profit out of a "wood bin?" you need to sell the objects in the bin separately (by scrolling down past the bin) and ensure its not actually transacted in the trade & left in the depot. It would explain the abrupt interaction with them leaving.

My fort had no cloth or anything, and all my dorf's clothes were deteriorating. To obtain enough cloth, I decided to trade one of my useless but valuable legendary artifact with the elves, but I did not realize that it was decorated with some wood. Well, I got my cloth anyway, and the elves never made it home.

Offered a statue to some traders, it apparently exceeded their weight limit, but buying anything off them seemed to make them mad with a 2k urist swing in their favour...

Giving gifts to the traders' rulers has no effect on the traders' opinion of you from a trade perspective. If anything, it should be slightly lowered, since they're forced to haul stuff to their rulers rather than haul valuable trade goods for themselves.

The absolute size of the profit doesn't matter, as traders go by percentages.

And yes, wooden decorations on goblinite garbage clothing is rather annoying, so I made a script to sell the contents of bins but not the bins themselves (for bin re-usage) and another one that did the same but also removed all things made out of wood or decorated with wood from the stuff offered.

So should I kill them for the stuff I want? Will they come back at some point if I don't kill them?

They'll come back the next year even if you kill them (and it might actually have a lower impact than killing all but one who reports back the horror of being offered wooden items, and, incidentally, having the caravan slaughtered).

It takes quite a lot of abuse to cause a civ to cease trading with you and go to war instead. Some people intentionally try to goad the elves (in particular) into going to war with them by trying to sell wooden items and refuse to agree to curb wood cutting, but find it harder than they like to cause a war (it's going to be a bit easier with the next release's raiding). A wooden item trading incident now and again won't keep them from returning the next year (sieges permitting).

Merchants can be tricky, but there's little you can't fix by spamming minecarts, I've found.

My worst merchant experiences have always started with me yelling, "nooooo! stop! That goblin is dead! Our fort is a safe place to trade at and I need to melt your goods to make armor!

You do not need to offer gifts to the merchants, just avoid offending their ethics (offering butchered trees to elves). If you offer them a trade with a 50% profit to them, they will take it.

But it won't happen to me, my bit doesn't count etc etc... Just saying, after my recent experiences I couldn't trust the public if I wanted to. People got their risk assessment neurons rotten and replaced with game theory. Folks walk around like fat turkeys taunting the world to slaughter them.

Some merchants came to my fortress, got into a fight with goblins and ended up drowning in the moat around my fortress.

Then their ghosts started haunting my dwarves.

Total jerks. Why couldn't they go die somewhere else?

That's very odd, since only (sapient) citizens should result in ghosts if not buried/slabbed.

Think the worst merchant experience I had was when a wagon of the human or dwarven caravan'd break down, and the traders basically take one look at the destroyed wagon and declare "Okay...  this is a bad omen and we should not trade this year."

Think the other notable thing was trying too hard to make a decent profit from the humans and pushing a deal once too many, and having the humans basically pack up pre-emptively after being fed up with the deals.

Worst trading experience? Probably that time when guards from the first caravan suddenly decided to slaughter half of my fortress without provocation. I still don't know what happened; probably a loyalty cascade but no idea what triggered it.

Wagons don't break down spontaneously. However, wagons can fall apart out of fright at the sight of e.g. half a goblin tooth.
