Survival horror:
Play on as dangerous(enemies) map as you can. Unleash the demons before the end of the first year. No using splat-bridges.
Otherwise, you're on you're own.

Call of Cthulhu:
Count your points in this one.
1 point for each item made from a sentinent creature.
5 points for each sentinent creature(accept your dwarves) killed by demons.
5 points for each of your dwarves that goes insane(and you don't euthanatize him immidietaly, but asylums are okay)
10 points for each sentinent creature accept your dwarves that you drive insane.
15 points for each food item made from babies.

Dungeon Keeper:
No guest can leave your fortress alive. Thus, place your trade depot deep enough to lure them inside. Use traps and tamed creatures.
Especially tamed creatures.

heres one that im trying out atm.
7 skill-less dwarves
1 pick
1 axe
10 plump helmet spawns
and all the remaining points are spent on booze....
....that means no food so you have to get a farm up and running asap before they all starve

Actually, it's quite possible to survive the first year entirely on herbalism.  Just make sure to put food stockpiles near wherever the herbalist is working to avoid having to trek all the way back to the fort entrance to drop off the food.  (I really don't know how people manage to have starving dwarves before they get 30 or 40...  Perhaps I have some innate tendancy to have enough subsistence herablists and fisherdwarves.)

It really depends on the map. Sometimes you'll get plenty of edible herbs and both cave fishes and swamp turtles, whereas on others you'll get nothing but hide roots (uncookable), no swamps, and no fish in the rivers.

A bigger problem with that challenge, though: You can cook booze.

Surviving until the first immigration wave is easy though, and then once they arrive it just becomes a normal game. I don't know if you could really call that much of a 'challenge'.

Here's a slightly expanded idea, take the "Urist challenge" (One dwarf, One pick, nothing else, killing every merchant/immigrant that comes over), only add an objective so the challenge actually ends sometime: Get Legendary status in every possible job.

I'd really like to see someone win this one. Legendary Building Designer could prove impossible to achieve  :) (I'll still be impressed if you get everything else to legendary)

build brige, remove bridge, etc....
after a while it will get u to legendary, ive got to try it now.

Fortified Fortress of Fortification +5
(Alternate lame name: People who live in fortified houses shouldn't throw rocks)
Every single rock tile that you decide not to mine must be turned into a fortification. (Every tile west of the magma that is).

The challenge is obviously because to fortify a certain rock tile you need to dig out both sides of the tile, which would leave you with another rock tile to fortify, until you mine out almost the entire mountain, leaving only a maze of fortified walls.
