No underground?

So.. Basically I embarked on a volcano and we drank from a stagnent pond at the base of the mountain, however... that pond dried up and everyones dieing of thirst, so i thought "No big deal, ima just dig down until I hit a cavern which might have lakes and water" but... i keep going down deeper and deeper and I aint finding any caverns, its been a long time now and there seems to be nothing... I did locate a lava sea though, not what I was looking for.

Have you altered the worldgen settings in any way? This might influence the number of caverns.

How large is your exploration shaft? If it's only a single tile wide, it can easily miss the caverns by random chance. Try digging other shafts in other places.

Also, there should be plants on the surface. Try harvesting them and making booze out of them.

Yeah I did a volcano embark and all the caves were super close to the bottom

As others have said, you should collect boozable plants on the surface (dwaves prefer booze over water anyway, except for the very few ones who have water as a favorite food item).
Also as stated, a single shaft has a fair probability of missing the caverns. Thus, when I hit the magma sea or the SMR I back up to the top (i.e. a little bit below the surface) dig some 10 or 20 tiles in some direction, and make a new shaft there. Depending on you cavern finding urgency, I'd consider making two shafts in two locations, e.g. 20 tiles in one direction and 20 in the other from the original shaft (assuming you have the standard two miners).
When I do find a cavern, I use the same technique looking for ones further down, i.e. branch out from the magma sea shaft just below the bottom of the cavern found and then go down there.

Finally, don't forget to plug the magma sea breach. If you've used stairs you can build an Up stair in the second last tile to effectively install a floor while retaining the up stair.

Also try looking about 5z levels above the magma sea as my caves were like a layer apart.
Though it may have been due to having one of those surface caves that act like stairs

If you feel for it.
just print "reveal" in DF-hack and take a quick look for the caves.
print "unreveal" and you go back to what you did see before your cheat.

I do it sometimes, just becouse I do not like stairs penetrating all the map...
I know that I will find everything in the end, and I sometimes quit forts becouse they ainīt looking good. So I rather cheat a little than quit for ugly forts.
