Iv got one guy on mining and 6 other guys with thumbs thoroughly shoved up asses... I went to the V menu like I used to in older versions but for some reason i cant seem to figure out how to change the jobs to mining... I feel like its been altered from older versions..

Don't think it's changed in years. v-p-l mining.

Note that mining, woodcutting, and hunting all have "tool uniforms" that conflict with each other (and military uniforms). You should not (and, possibly, cannot) activate more than one of those labors on any given dwarf.

And, it ought to go without saying, you need the necessary equipment (pick, in this case) available to pick up, or there's no way anybody new is taking on that role.

I did press L for labor, mining is not listed

What is listed..?  (Screenshot might help, typing out what you see in the menu pane would probably do if that's not easy to do, e.g. on a different device that's not trivial to connect..)

Mining should be the first one in the list. I also assume you typed 'l' rather than 'L'.

Did you view a visitor by mistake perhaps? You can't set their labors while they're just visiting.
