what kind of axe is better?

More or less the tittle.

I know the trusty battleaxe is the only one which dwarves can craft, so it's the only one I might find made out of steel in an unmodded game, but I've read that great axes are better at cutting off limbs (though I clearly remember having problems cutting through an unconcious cave dragon's scale with an iron one...), and apparently halberds also have a stabbing attack, though I dunno how effective that is.

Or tell me what weapons you guys use and why. I wanna make a hunter, and I tried pikes and spears, but it sure takes long to take down a rhino.

Depends on what you're trying to cut.

The general damage consideration is based on if you think the weapon material in a steel battle axe trumps the higher contact area:penetration size + added weight of the iron or bronze great axe.

The great axe has the highest contact area:penetration size (of any weapon) at 60000:8000 and if iron/bronze weighs 10r. A steel battle axe is 40000:6000 at 6r weight. So what you're trying to cleave matters.

Also factor your character's size as a modifier for strength in relation to damage. A large character at say above average is as strong or maybe stronger (?) than a average sized character at high strength.

To drop something with the lowest number of shots is part body shape dependent and part skill specific as a higher skill (towards legendary) will result in higher damage.

If I'm trying to kill an inorganic (mineral) titan in the lowest number of shots (once at legendary axedwarf), and while weapon I'd want may be titan body shape dependent, in all likelyhood, I'd opt for the great axe.

It depends on how effectively you can wield the great axe (how big you are). If you can use it one-handed without penalty then it's objectively better. Weapon skill also matters a lot. With novice axeman I had trouble chopping off an unconscious unarmored human's head, but with legendary I can lop off heads left and right, unless the target has a iron/bronze helmet (then I just wrestle it off or strangle him) or is too big (when that's the case I break their legs and bleed them).

All things being equal the great axe is significantly better, but there are tons of considerations. Are you big enough to wield it? Are you big enough to wield it one handed? How does the quality and material it's made from compare to available battle axes? Etc.

If you are fighting a forgotten beast made of iron and have a choice between an iron great axe and a steel battle axe the steel battle axe will be better, but if you are fighting anything made of meat or a material softer than iron then the great axe will be better assuming you can wield them both one handed. With edged weapons other than daggers and morning stars you always want to make sure that the material it is made of is better than the material you are bashing it against which can be a down side to great axes since as far as I know you can't find them in steel due to the fact they aren't native dwarven weapons.

It's always important to keep in mind you get extra cool points for the great axe. Nothing says awesome like a ridiculously oversized weapon. Bonus points if you run around wielding it in nothing but a loin cloth.

One of my companions is wrecking with a 2-H sword. If I don't attack with a weapon, am I more likely to parry?

Yes to the parry thing. I sometimes crawl around people whose legs I previously broke to train shield user. If you don't break their weapon arm they will use their weapon too, and you will sometimes parry. I think you parry more if your weapon and fighter skill is higher than your shield user.
