Visitors and war.

So I see in the wiki it says that visitors might side with their civ if it attacks you, just reporting that this does indeed happen, just had a bunch of bards attack my tavern when the humans id been waiting for caravans from attacked with....6 guys. My 10 hammer lords beat them all to death, and stray dogs mauled the bards to death. I have to wonder why they even attacked when it was so hopeless. No idea if the game models "is this a good idea or not?" though in such decision making.

Not currently, this is pretty typical for how groups function right now, hopefully in the future we'll see improvements in threat assessment and more willingness to avoid combat when the odds are badly against them.

Bear in mind that visiting Thieves and Mercenaries can also go hostile when you first see an invading army, not just Bards and Scholars. While a bard bashing your citizens with his wooden flute isn't particularly dangerous, the same can't be said for a mercenary Swordmaster taking a swing with his two-handed sword. I once had a mercenary Greater Badgerman Berserker (FD) take out a good twenty civilians, starting with the mayor to whom he was presenting his petition, before my military arrived.

Though I hope we also can have instances of hidden information.

Luckily, all ive gotten visiting is bards and poets so far. I suspected a huge tavern would get me lots of guests, probably build an equally stupidly large library and temples, but it seats about 300, about 24 guest rooms, but I still get only a handful of guests visiting The Warm Sock, all it seems to do is make my fort grind to a halt as every dwarf goes to listen to a song or dance in a big circle and concentrates diplomats in one space.
