Civilizations

I'm playing a fortress, and when I look at Civilizations, it says there's only one dwarven and one Kobold. Aren't there typically more than that? What about Goblins, Humans and Elves? Did my world gen kill everyone off? Does this mean I won't get any goblin invasions, or visits from Humans or Elves? If so then I might as well abandon this fort...

That only shows the civilizations who your fortress has been in contact with. Yourself and the kobolds who tried to rob you.
Nearby civs are listed on the embark map when you choose your location.

^^^ what he said... and unfortunately if you were hoping for sieges? It won't happen.  On the other hand you are in for a nice smooth ride, great for just working out a fledgling empire, with no interruptions.  Except for maybe a few bastard kobolds stealing some nice shite!

Sieges might still happen, if goblins were on the neighbors list on embark.  They don't show up on the civ list until the first attack occurs.  Humans and elves also don't show up on the list until they send a caravan (or, if at war, an attack).

What if I forgot to check the neighbors list on embark? Is there any way to know whether I can expect a siege before it actually happens? I don't want to invest any more time in this fort if there aren't going to be any sieges.

I would copy the save, retire the fort on the copy, then page over to where the fort is and see who is on the neighbor list.

You can keep a couple of instances of DF open at the same time, it doesn't tend to complain. Have one open just to check Legends, embark spots, etc.

Since World Activation a couple of years ago, it's really not a good idea to embark at random. Export your world to Legends Viewer or some other util and check out what kind of world you're in before you start.

In the future of course, you'll get bad guys with world dominating, artifact ring hunting tendancies and a slider to make your world as violent as possible. Then you can probably get away with the random embark - wondering how long it'll take for the goblin armies to reach your part of the world.

In the meantime embark near a big bunch of pits, a tower and a dark fortress for Fun times.

If you want sustained invasions, you should embark such that your nearest goblin settlement is a tower with lots of goblins. You'd check the goblin count using legends mode.
However, the 2 week embark period is often a hectic period of war, mayhem, and site founding/reclamation, so copying the save, retire the copy, and then check that legends mode info as well is probably a good idea, since the goblins could very well have settled a crummy pit with 50 goblins closer to you during your travel, and all invaders come from the same site (which usually/always is the closest on owned by that civ). They don't know how to recruit from other sites, so when the population is depeted, you're out of sieges for the next 70 or so year until they sent a couple of pathetic waves of unarmed recruits before again running out of warm bodies to send.

If you're really unlucky the tower you embarked close to has fallen/is no longer controlled by any goblin civ by the time you reach your embark.
