Filling needs?

How important is it to constantly fill the needs of all my dwarves? How much do I have to micromanage them? If I do not fill them, will they become very stressed out?

They'll fulfill quite a few needs, such as picking their favourite meal, on their own if provided for, but any need takes a while to degrade - though, they'll do, say, praying longer if doing catch-up.

The happiness bonuses/maluses are not a major effect in the grand scheme of things, however the focused/distracted state can act as skill bonus/malus. I do not currently know to what extent, though do not worry too much if you're utterly unable to fulfil their desire for penguin eggs - 1 or 2 completely ignored (red) needs will only give moderate distraction overall.
