To me, Mind-Control doesn't equate to access to Memory and Intelligence.
If I'm basing myself on the RL example, the spores will alter the infected hosts behavior to spread more spores, but the Shroom itself won't gain intelligence.

To achieve the effect you are speaking off, it would need a specific power allowing it to gain intelligence from its hosts. And it wouldn't be a normal trait, as such a form of parasitism mean the spores can adapt themselves to a far more complex mind than themselves.

It's like if you could crack and control a super-computer with a basic calculator.
