I think there's a 3-stage family of every type, so I'd recommend checking the Bulbapedia page of families by the time they were introduced and skimming it. 3-stage families are really easy to recognize at a glance on the page.

You know, I could take Litwick even though ATH already has one and just focus on the Fire type rather than the Ghost type. I'll have to think about it.

Use this, find a Pokémon you like who has 3 forms and take that. The 1st, 4th, and 7th Pokémon of each generation are good choices if you don't know what to use.
