Determining my "defensive rating"

Is there a way to see what my defensive rating is based on gear I'm wearing?  Or does this even exist in the game?

Not in the way you mean it. There is no observable number like AC1, or AC0.

You want to wear the most clothes possible. More layers equal more protection:

Just scroll down a bit from the paragraph clutter once you open that link and you'll see the optimal layout listed.

It should be noted the goal defensively is not to get hit. A sound defense means an attack is either blocked, dodged or parried.

ALso try to wear the best armor possible, eg bronze,iron,steal,adamantine

There is the boolean value of "still alive" and "definitely dead" however. That is how defense is measured in DF.
In a serious note, there really isn't any value you can assign to your defenses as a rating. You want well protected, you want to get your hands on everything and train every skill. Just don't be surprised when your legendary +5 dodger, accomplished shield user and weapon user wearing full bronze plate and mail and a perfectly good shield dies in two rounds of combat to a single enemy that just so happens to take advantage of the fact that it is bigger than you to knock you on your ass before ripping your head off.

On that note, in-game press 'C' and make sure your charge defense preference is set to dodge or move around. Because if for whatever reason you don't dodge, you stand to get knocked on your ass and decapitated while you're stunned.

Yeah and given that this game is very much based on chances you can very much still die to a random arrow even though you are legendary everything with steel armor on top plus grandma urists legendary socks.

I always thought all the glory went to the half dead. What was that old saying? "The dead failed, the live never tried, but you you're drooling and unresponsive, so yeah, you've seen things eh? Let me help you out of those masterwork socks."

Freudian slip? I've never been able to find steel that wasn't being worn (except once at a temple shrine)  :)
