For non-glacial embarks:

2 Miner/Architects
1 Carpenter/Woodchopper
1 Industrial Dwarf (metalcrafter, jeweler, etc)
1 Thresher/Planter/Brewer
1 Mechanic/Mason/Architect
1 Military Dwarf with Teacher

I tunnel down one level, create a small entry passage, and some chambers. I build a Trade Depot, carpentry, masonry, mechanic, craftsdwarf shop, jeweler, still, butcher, and tanner in close proximity. I seal the entry with a raising drawbridge.

Farming and dining areas are designated, barrels and bins are made from wood, and things are produced (stoneware, metalcrafts, jewels) for trade to survive the first year. Then dedicated areas are carved out for each workshop. Then some kind of unnecessary theme begins, like "capture everything that comes on my fort grounds and seal it in a vault".

I'd always thought, planned, estimated that dwarfs drank four times a season, or twice for every time they ate. 

Funny thing is that the difference never struck, disturbed, or was noted by me.  Note to self: learn to count.
