What are the benefits of a tavern?

Extra people around to eat your FPS, drink your booze, start fights, and get killed by invaders (or your guards) which is probably blamed on the fort.

Those are some cons. What are the pros?

Eventually, they can join you as citizens.  Humans, elves, and goblins may not be better fighters than dwarves, but they can use and often come with weapons not usually available to you, which can be cool.  I've definitely had issues with goblin citizens getting into a lot more fights than others, although they also made a particularly eloquent goblin the mayor, and he's actually been just fine as mayors go.  It's at the very least interesting to have a multi-racial citizenry.  I'm certain more !!SCIENCE!! needs to be done regarding whether certain races are better/worse and particular jobs than dwarves.  The ability to make your elven citizens your only woodcutters might be worth it, even though because they hate it so much.

Maybe if you don't create any temples or libraries, the taverns "socializing" activity will help to lower the accumulated stress levels your dwarves get in order to avoid the depression spiral that happened on long lived fort in 40.x

But from my test, temples and libraries are sufficient enough to prevent depression, and without the taverns cons.

Maybe when player fortress retiring will not be that bugged anymore (despite the page say it was fixed in 42.04, that bug is fully present in 42.06), it will be useful for when you'll want to revisit your fortress in adventure mode.

Socializing promotes friendship->marriage relations, if you want the dorfs to procreate (but you'll literally have to wait decades for them to reach half decent couple numbers without help). Reciting poetry and whatnot also can satisfy the need to learn something (as they increase in rank), and probably also increases the chances of them satisfying their friends/family meeting needs (if they've managed to get any of either) from abysmal to low.

If you don't want visitors you can set the visitor cap to 0 (or embark in a world where the only civ big enough to be capable of sending out people are the goblins trying to kick in your front door).

Visitors also bring the multi racial dimension to the fortress as Gremdavel said, and can occasionally provide some !!FUN!! if a visitor is a vampire or were (the vampire I had visited, socialized, and left, but was clearly labelled as a vampire visitor by DF. I kept a VERY close eye on him during the visit, though. Even vampires want some time off, it seems).

You can use taverns as alternative population sources. They are not a replacement for migration waves, but it's better than waiting X years for fort born children to join the workforce.

If you don't want visitors just set the tavern to citizens only. Let your dwarves enjoy the benefits of the tavern in peace.

When some otherwise useless peasant but with excellent musicianship migrates in, I feel good giving him or her some creative outlet in the tavern. They would not have this opportunity in a regular dining hall or meeting hall.

Taverns make a great buffer zone to protect your Fort.  Make your Tavern the primary entrance, so all ambushes and sieges must pass through it.  For added !FUN!, link it to the Caverns, so your visitors can help injure Forgotten Beasts and other critters before you risk your military.

Toady mentioned that while deaths will put off some visitors, others are actually attracted by the danger.
Helps to have a large world population I guess.

I've just come back to DF after like a year and it seems like retiring bugs are still a thing, what a shame. Before I waste my time, do retired adventurers still appear as hostile if you retire them in player fortress and return to the fortress?

It would be 100% fantastic to turn off migrants, have the original race die out over time, and now your fort is a elf non-dwarf fortress.
