I just got the message that the dwarf I had assigned as a scholar in my library had become a student of one of the engineers visiting my fort (who is a long-term resident).

So out of curiosity, what happens now? Will the scholar likely become a mechanic like his teacher? Is there a chance the scholar will leave my fort when/if the teacher leaves?

I doubt anything effectively will change.  In my experience, and in grumblings around the campfire, no one learns anything above Dabbling from libraries - scholar, student or otherwise.  I don't think this is intended, it's just not happening in Dwarf mode.

And I'm not absolutely certain, but I don't think anyone ever emigrates.

Non-permanent Scholars leave after a while. They do write about the subject they study and leave the books in the library so other Scholars can also learn about it.
