I got two dwarves missing. No combat report etc, so I went to all the units looking for a hint and eventually got a lead.

Of course the alleged dwarf was on a squad, trained and loaded with armor and weapons. Oh well. Demoted it to peasant, so it dropped all the stuff, just to be sure. At this point I hadn't confirmed whether it was or not a vampire.

Time to set it on a hotkey and keep an eye on it. And then it went 'No Job'. Except instead of heading to the meeting hall, it went straight to the wilderness.

now, how do I kill that thing? Haven't found the corpses I cannot serve it some justice.

dwarves with no job don't really go to the meeting hall anymore. Only stray unpenned animals, and chilling diplomats with their escorts still reliably go there.
Dwarves with no job tend to stroll to the place they've last been taking a job. Which includes military stationing, making that a crude tool to tell your dwarves where to go on their off-time (and cluster them together so they can get some social interactions going). Your dwarf wandering into the wilderness is nothing suspicious. Perhaps he picked up a goblin corpse there, or you let him patrol there when he was still in the military.

Now how to kill, if it is a vamp after all. Try to locate your missing dwarves' corpses using the stocks screen. Corpses are nearly down the bottom of the list. See if you can accuse him.

Otherwise, if you don't want to use military commands to tell him where to go, you could build a lever in a lockable room, use the manager options to allow only that dwarf to pull it, set it on repeat, lock the doors once the dwarf gets there. I'm sure you can come up with various nefarious means of vamp disposal / use once you've got it locked safely away from your dwarves.

Why dispose of him? have a small library (table,chair and bookcase) where you have dumped a couple of quires (like 40ish to be safe). and you have a scholar you can wall in that will be scholarly forever writing books.

Ofcourse getting them out is harder. and you might need a way to add more quires.. ;)

assign him to a 1x1 burrow and build walls around him and a floor on top, he will then go insane after a few years, if he is stark raving mad then let him go and enjoy having him aimlessly wander around

also assign him to mayor and he will never mandate anything

I always put vampires to work. They make rather solid millitary dwarves particularly if they already have martial skills. The only problem is you need to place their accommodations right next to where you plan to deploy them preferably with several doors between where you plan to use them and the rest of the fort. They don't heal like lycanthropes but they are very strong combatants. Put them in full steel armor with a good weapon and they will be strait up killing machines. I once had a hammerlord vamp that I assigned a couple of war grizzlies to and she wrecked anything and everything she came across. So long as you give them some high quality equipment and a nicely furnished suite they are pretty much set for eternity. They don't need food or water and armor doesn't wear out like clothing so they will sit their contently admiring the quality of their possessions for the rest of time.

The only real down side other than having to keep a close eye on them when you let them out is that it's a bitch to find them a sparring partner. If they aren't already good fighters you have to do all their training on the front line unless you are lucky enough to find a second vampire to partner up with. Assign the vamps a few war animals. Even if they are just dogs incapable of doing any real damage they will distract the other combatants so the vampire doesn't get mobbed as badly. Just make sure you design their quarters near where your enemies will be rather than your dwarves. They don't play nice with other dwarves and thus have to be kept separate. You don't need to worry about them feeding on their animal companions since animals don't sleep and vampires only feed on unconscious victims.
