Why do we take so long to do anything? Are we just really terrible builders/trap-layers/spell researchers/etc.?
The in-universe explanation is that magic is just really difficult, intricate and involved, and most of the building and trap-laying etc. requires a lot of magic. Also, they're
really dedicated to beautiful craftsmanship. It's also that the undead tend towards monomania, and so they tend to focus on one project (even if it's just a spike trap) for at least a human lifetime.
First, their Turn ability just specifies "mortals", not "living creatures". As long as something has a non-infinite lifespan (a golem that will eventually run out of charge, for example), they can turn it into a vampire.
Practically, there aren't many creatures that fall in that golem category that you'll encounter, but I'll change the wording.
Second, Aversions lack the "you can't avoid this damage by any means" clause, which means that a vampire with Toughness can ignore their aversions by just tanking the damage. Even if the Vampire is exposed to two Aversions at once, he can still chose to take no damage from them because they deal damage separately.
