well, ancient lore on phoenix is very diverse and often contradictive. In some versions they dont even burn, they just die, rot, and then are reborn from the carcass. Morgana could have only guesstimated that it might be hot either, and probably would have also gotten burned, if she had the balls to just simply go ahead and do it

common perception is that a pheonix is a bird that symbolises rebirth and rejuvenation, its dying and rising from the ashes being more or less a symbolic cycle of the sun setting and rising again. Healing powers are attributed to it just as often as fire powers
