vanila animal menu (Z) sort order

Does anyone know the sort order in the animal list?
Is it based on age or what?

Pretty sure it's based when the animals arrived. Newest animals to show up in the fort are at the bottom. The animals you've had longest are at the top.

This.  The only exception is that war animals are moved to the bottom of the list.

And it's the same with the units-others list. They're sorted in the order they appeared on the map (not the one in which they were detected by you, in the case the mapping is incomplete).
