In Dark Souls, the bolts fired from traps like this are at a universal chest-height, so there's really no way Alain could dodge them without them hitting Typhos.

The bolts fired from left to right, from an aperture cunningly hidden in the left cave wall - where someone would be expecting the bolts to come from the stone bricks up ahead. They then collided with the other cave wall on the right, shattering.

Canoting is always the final thing someone does.
The order of actions is
move -> trade-> attack -> canto

Someone could trade to them, but the cantoer can not initiate the trade.
