In CK2 if you don't have the DLC then the people associated with said DLCs (Muslims, Pagans, Jews) are not available to you.
I have played many multiplayer games where the host owned the DLC and I did not and yet I could play with the DLC in CKII.

I played my first game as Turkey to get a hold of the new systems. It was fun. You can experiment in some low level warfare before the war actually begins, noone's going to stop you going after Greece and Bulgaria, and it allows you to get a hang of some of the systems without stuff getting too crazy. Then when the war starts, you're in an ideal position to join either side, although you may have a bit of a challenge if you're going against Russia. Italy's a good bet too.

Also, as far as I can tell, the Together for Victory DLC only matters if we're going to play commonwealth countries.

CET here too, I'm thinking one of the weekends would be our best bet so even late/early hours aren't too much of a problem (tho I'm fine either way what with the  unemployed for the time being thing XD)
